Every have lots of leftovers? No portion large enough to feed everyone for another meal, but you don’t want to throw them away (especially now when your income has likely been cut due to the pandemic complications)?
Well, this is what I was faced with again.
I had a cooked hamburger patty, a smattering of green beans, a teeny portion of shell macaroni and cheese. There were also some chicken crumbles from chicken fingers I had made for my little one.
Not to mention I had a hankering for comfort food all day. This comfort food was in the form of white gravy on bread (since I was too busy…and lazy…to make biscuits).
Light bulb!
I decided to crumble up the hamburger in a skillet, then cover it with a sprinkle of flour, a little olive oil, and a dollop of coconut oil (at least I kept the oils healthy!). I fried them together, added milk and continued to stir and add milk until the consistency was good gravy. Boiled the gravy for a minute (to make sure the flour was cooked well), then added salt and pepper.
On my plate, I had torn up a slice of bread. On top of that I dumped the smattering of green beans and teeny portion of mac and cheese. Then I poured the gravy over it all, and topped it with the sprinkle of fried chicken crispies.
Voila! And YUM!
Leftovers don’t have to be thrown away, and making something out of them doesn’t have to be complicated.
