My mom has to watch her salt and is allergic to certain oils. I’ve gone with her into store after store trying to find chips without salt and fried in an oil that she can eat. It’s so frustrating and disappointing to have the munchies for something crisp, easy AND healthy, and not be able to get that taste craving met. She was settling for taco shells but, wow!, even shells have some pretty bad stuff in the ingredients!
The other night I was frying some organic corn tortillas (because non-organic tortillas usually also have a lot of bad stuff in them) to make homemade tacos, and thought, Hey! Why not try to make some restaurant tortilla chips for my family. I could use an oil I knew my mom could eat and not salt the ones I give to her. So I cut a few tortillas like mini-pizza wedges and put them into the oil I had been using to fry the tortillas into taco shells. It worked great!
I gave some to my mom, and she was loving it! She didn’t have to worry what additives and ingredients were in them, or what oil they were fried in, or whether they had salt! She really enjoyed them and I felt so good that I could make her such a treat! And when I DID salt some for me, I could use my pick Himalayan salt instead of sodium chloride (table salt)! Win! Win! 👍😁
My Little Blessings LOVES potato chips…🤔 I’ve bought a mandolin slicer and an air fryer. Somewhere down the road, when I get more time to experiment, I’ll post how to make healthy potato chips for the potato chip lovers out there!
EASY PEAZY RECIPE FOR FRIED CORN TORTILLA CHIPS
- Organic corn tortillas, cut into sixths (like a mini-pizza)
- organic oil of your choice (I used half EVOO and half avocado to help the EVOO have a better tolerance for a higher heat)
Place a pan or skillet on the over. Pour in the oil to about half an inch deep. Heat the oil until a tiny piece of tortilla immediately begins to bubble when dropped into the oil. Put the cut pieces of tortilla in the hot oil and let them sizzle, turning occasionally to evenly brown. When crisp, remove from oil and place on paper towels to absorb the extra oil. Salt is optional.
